No Bake Mint Oreo Cheesecake

Ingredients- No Bake
5 tablespoons unsalted butter
16 ounces cream cheese
1 cup powdered sugar
1 teaspoon peppermint extract
3 drops Green food coloring
2 ½ cups heavy whipping cream
Instructions
Crush 24 Oreo Mint cookies into fine crumbs using a food processor or by placing them in a sealed plastic bag and rolling with a rolling pin.
Transfer the crumbs to a mixing bowl and mix in 5 tablespoons of melted unsalted butter until it resembles wet sand.
Press crumbs into a 9-inch springform pan with a spoon or glass.
Place the crust in the refrigerator to firm up.
In a large mixing bowl, beat 16 ounces of softened cream cheese with 1 cup of powdered sugar until smooth and creamy.
Mix in 1 tsp peppermint extract and 3 drops green food coloring.
Fold in 1 ½ cups whipped cream gently. Mix carefully to maintain the fluffy texture.
Stir in 10 chopped Oreo Mint cookies to add texture and extra flavor to the filling.
Remove the crust from the refrigerator. Spread cheesecake filling over crust, smooth with spatula.
Cover the cheesecake tightly with plastic wrap and place it in the fridge to chill for at least 4-6 hours or until it’s fully set.
Take the cheesecake out of the fridge and slice it into 8 large pieces.
Top each of the 8 slices with an Oreo and 2 tablespoons of whipped cream, then serve individually.
Tip: To give the filling a minty hues, add more drops of green food coloring.
Clover Sprinkle Pretzels
These festive goodies have earned their spot as St. Patrick’s Day classics. Crispy pretzels coated in green candy and topped with festive sprinkles are always a crowd-pleaser!
Ingredients - No Bake
45 mini pretzel twists (to form the clover leaves)
15 pretzel rods (to create the clover stems)
16 ounces green candy melts
2 teaspoons coconut oil or vegetable shortening
3 ounces Sprinkles
2 ounces Green sanding sugar
Instructions
Line a baking sheet with parchment or wax paper to prevent sticking.
Lay out your mini pretzel twists and pretzel rods. These will form the clover leaves and stems.
Add the green candy melts to a microwave-safe bowl.
Microwave in 15-30 second intervals, stirring each time, until smooth. If too thick, add 2 teaspoon of coconut oil or shortening.
Dip the end of a pretzel rod (about 1 inch) into the melted coating. This will act as the “glue” for attaching the clover.
Press 3 mini pretzel twists onto the coated end of the rod to form the clover shape. Hold for a few seconds until they stick together.
Place the assembled clovers on the lined sheet and repeat. Let set for a few minutes.
Using a dipping tool, dip only the clover into the coating, keeping the pretzel rod untouched to preserve its brown color.
Lift the clover pretzel from the coating and place it on the baking sheet.
Sprinkle colorful sprinkles generously over the coating while it’s still wet.
Add a sprinkle of green sanding sugar for extra sparkle and festive flair.
Place them in the refrigerator for 15–20 minutes to fully set.
Tip: Work quickly with Candy Melts. Reheat the candy melts in short intervals if they begin to thicken.
Leprechaun Crockpot Bites
These festive Lephrechaun Crockpot Bites are a magical blend of sweet and salty goodness that’s perfect for celebrating! With their creamy mint coating and satisfying crunch, these bites are a lucky treat everyone will adore!
Ingredients
2 lbs White Almond Bark
3 bags White Chocolate Chips
1 cup Green Candy Melts
2 cups Salted Peanuts
2 cups Mini Pretzels (broken into pieces)
1 ½ cups M&m’s Milk Chocolates
½ cup Sprinkles
1 ½ cups Mini Marshmallows (optional)
Instructions
Start by lining a baking sheet or kitchen counter with parchment paper or wax paper.
Set your crockpot to LOW. Add the almond bark and white chocolate chips first, followed by the green candy melts. This ensures even melting.
Cover the crockpot and let the chocolate melt for 1 to 1.5 hours. Stir occasionally to ensure smooth melting, but avoid over-stirring early on.
Once the chocolate is fully melted, stir in the salted peanuts.
Use a small scoop to drop clusters of the mixture onto the prepared parchment paper. Work quickly, as the candy will start to set as it cools.
While the candy is still wet, sprinkle it with mini pretzel pieces, M&M’s milk chocolates, sprinkles, and mini marshmallows.
Let the candy cool completely at room temperature (about 30 minutes to an hour) until firm.
Tip: Always keep the crockpot on LOW to prevent the chocolate from scorching.

24 individual Classic Graham

Instructions
Slightly soften the mint chocolate chip ice cream for easier scooping.
Lay out 16 individual classic graham crackers, pairing similar-sized ones to ensure uniform sandwiches.
Place a scoop of ice cream on two graham crackers as the base, sprinkle mini marshmallows over the ice cream, and gently press another graham cracker on top to form the top layer.
Sprinkle mini chocolate chips on top of each sandwich as the finishing touch.
Arrange the 8 completed sandwiches on a parchment-lined baking sheet and place them in the freezer.

Place the white chocolate chips in a microwave-safe bowl.
Microwave in 30-second intervals, stirring after each, until fully melted and smooth.
Melt the mint-flavored chocolate chips in a separate bowl.
Pour the melted white chocolate onto the prepared baking sheet. Use a spatula to spread it into an even layer, about 1/4 inch thick.
